We will be staying in Perpignan for a week and would like to go to carcassonne for the day could you please advise how best to get there. Thanks

Unless you have a car the only way is by train through Narbonne. Takes about 80 minutes but the trains are rather irregular to say the least. Plan your trip carefully!
Timetables change on 6 July for the summer but you can see the current offerings at

and note that several trains require reservations.
Have a nice trip - I am the Perpignan area as I write and at last the sun is out but it is rather windy!
